For the Meatloaf:

1 cup breadcrumbs (plain or Italian-style)

1/2 cup grated Parmesan cheese

1/4 cup milk (whole or 2%)

1 tablespoon Worcestershire sauce

For the Onion Topping:

2 large onions, thinly sliced

2 tablespoons butter

1 cup beef broth (low sodium preferred)

8 slices Swiss cheese
Step-by-Step Instructions:
Step 1: Prepare the Meatloaf Mixture

In a large mixing bowl, add the ground beef, breadcrumbs, grated Parmesan, milk, eggs, Worcestershire sauce, salt, and black pepper.

Use clean hands or a large spoon to mix everything together until just combined—don’t overmix, or the meatloaf may become dense.
Step 2: Shape and Place in Crockpot

Shape the mixture into a loaf that’s slightly narrower than the width of your crockpot.

Carefully place the loaf into the crockpot (you can line the bottom with parchment paper or foil for easy cleanup if desired).
Step 3: Caramelize the Onions

Heat a large skillet over medium heat and add the 2 tablespoons of butter.

Once melted, add the thinly sliced onions.

Cook slowly, stirring occasionally, for 20 to 25 minutes, until onions become soft, golden brown, and caramelized.

Add the beef broth and cook for another 5–8 minutes, until most of the liquid is absorbed and the onions are rich and jammy.
Step 4: Add Onions to Crockpot

Spoon the caramelized onion mixture over the top of the meatloaf in the crockpot.

Spread evenly so it covers the entire top surface.
Step 5: Slow Cook the Meatloaf

Cover the crockpot with the lid.

Cook on LOW for 6 to 8 hours, or until the meatloaf is fully cooked (internal temperature should reach 160°F / 71°C).
Step 6: Add Swiss Cheese

About 10 minutes before you’re ready to serve, place the Swiss cheese slices evenly over the top of the meatloaf.

Cover and let it cook for 10 more minutes, or until the cheese is fully melted.
Step 7: Serve

Carefully lift the meatloaf out of the crockpot using two spatulas (it will be tender!).

Slice and serve hot. Great with mashed potatoes or crusty bread.

If you like a crusty exterior, you can transfer the cooked meatloaf to a baking sheet, broil it for 2-3 minutes, then add cheese and return to broil until bubbly.
